Rich, creamy, and packed with protein, this garlic butter salmon with spinach and mushroom is the ultimate one-pan healthy dinner.
Ingredients
- 2 salmon fillets
- 1 tbsp olive oil
- 2 tbsp butter
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- ½ cup heavy cream
- ¼ cup chicken broth
- 1 tsp Dijon mustard
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt & black pepper, to taste
Instructions
1. Heat olive oil in a skillet over medium heat. Sear salmon for 3-4 minutes per side until golden, then set aside.
2. Melt butter in the same pan. Sauté mushrooms until browned.
3. Add minced garlic and cook for 30 seconds.
4. Pour in chicken broth, cream, Dijon mustard, and thyme. Stir and simmer 3-4 minutes.
5. Add spinach. Stir until wilted.
6. Return salmon to skillet. Simmer 3-5 minutes, spooning sauce over fish.
7. Serve hot with your favorite side.
Notes
Use coconut milk instead of cream for dairy-free.
Add chili flakes for a spicy kick.
Serve with rice, pasta, or cauliflower mash.
