Description
These crispy cheddar corn potato fritters are golden, cheesy, and full of savory flavor. Made with simple ingredients, they’re quick to prep and perfect for snacks, brunch, or sides.
Ingredients
1 ½ cups flour
2 cups corn (or one 15 oz can)
½ cup shredded cheddar cheese
⅓ cup fresh chives, chopped
½ cup milk
2 eggs
1 teaspoon salt
1 tablespoon chili powder
½ cup oil, for frying
Instructions
1. Add all ingredients to a large bowl.
2. Mix well until batter is thick and scoopable.
3. Heat oil in a large skillet over medium-high heat.
4. Spoon 2 tablespoons of mixture per fritter into the hot oil.
5. Fry 1½ minutes per side or until golden brown and crisp.
6. Drain on paper towels before serving.
7. Serve with sour cream and chopped chives.
Notes
Use canned corn, but drain well to avoid soggy batter.
You can freeze cooked fritters for up to 2 months.
For gluten-free, use a 1:1 GF baking mix with binder.
