Description
Juicy beef meatballs stuffed with cheddar and wrapped in smoky bacon. These BBQ bacon bombs are perfect for cookouts, game days, or protein-packed comfort food any time.
Ingredients
1 lb ground beef (80/20)
½ cup sharp cheddar, shredded
½ cup BBQ sauce
1 tsp garlic powder
1 tsp onion powder
½ tsp salt
¼ tsp black pepper
12 slices thick-cut bacon
12 toothpicks
Instructions
1. Preheat oven to 375°F or heat grill to medium heat.
2. In a bowl, combine beef, cheese, BBQ sauce, and seasonings.
3. Form mixture into 12 even-sized balls.
4. Wrap each ball in bacon and secure with a toothpick.
5. Place on wire rack or grill over indirect heat.
6. Cook 20–25 minutes, flipping halfway through.
7. Brush with more BBQ sauce in final 5 minutes.
8. Rest 5 minutes before serving.
Notes
Use a meat thermometer to check internal temp (160°F).
Let rest after cooking to keep the cheese inside.
Bacon will crisp better on a wire rack or when rotated often on the grill.
Try pepper jack for a spicier variation.
